November Recipe of the Month

Quick Avocado Chocolate Pudding:

This is a yummy recipe I make when I want something sweet! And it only takes a few minutes and a couple ingredients. I’m gluten free so it’s perfect for me, and it's also vegan, but you can use milk or milk substitute for water if you want.

You will need:

5-6 Dates, dried and pitted

1 Avocado, medium and ripe

10 Tbsp of water (milk or milk substitute if you prefer)

3 Tsp cocoa powder (sometimes I’ll sub chocolate protein powder in and use 1-2tbsp)

1 Tbsp Maple Syrup (substitute another sweetener if prefered)

½ Cup of fruit on top *optional

Instructions:

  1. Chop the dates into small pieces.

  2. Add the dates, water and maple syrup to the food processor, and blend until smooth.

  3. Add the avocado and cocoa  to the food processor, and blend until smooth.

  4. Taste test. Add more sweetener or liquid depending on taste and consistency you like.

  5. Add fruit on top if you want and put in the fridge to cool or eat right away!

The final product usually won't be green, unless you use protein powder instead of cocoa powder like I did here.
